You haven't baked until you've made this spiced upside down banana cake! Using Angostura 7 year old rum to deliver some delicious, complex and boozy flavors.

Cake:
1 cup brown sugar, 200g
3 ripe bananas, mashed
2 eggs, room temperature
1/4 cup melted butter, 55 ...grams
112 cup avo oil
1/2 cup greek yogurt, 120g
2 tbsp ANGOSTURA® rum
2 cups all purpose flour, 260g
1/2 tsp baking powder
1/2 tsp baking soda
tso cinnamon
1/4 tsp salt

Topping:
12 cup brown sugar
1/4 cup butter, 55g
1 tbsp ANGOSTURA® rum
3 ripe still firm bananas, sliced lengthwise
whipped cream:
1/2 cup heavy cream
1 tbsp ANGOSTURA® rum
1 tbsp granulated sugar
1 tsp vanilla bean paste
Preheat oven to 350F

•In a bowl add 3 very ripe bananas and mash them. Add in brown sugar and mix until well
•Crack in two eggs and add rum and vanilla. Whisk together until eggs are no longer stringy
•Add in greek yogurt, avocado oil and butter and whisk until everything is incorporated and oils are no longer separating
•Add flour, baking powder, baking soda, cinnamon and salt. Mix until just incorporated
•Cut 2 bananas lengthways and place cut side down into a parchment paper lined baking dish
•In a pan melt butter and add brown sugar. Cook on medium heat until bubbly. Remove from heat, stir in rum and pour over bananas
•Pour the cake batter over the caramelized bananas and bake for 50-60 minutes or until golden in
color
•Once done baking let sit for 15 minutes. Run a knife along the edges of the cake. Place a plate over the cake and flip. Serve with whipped cream.

For your next gathering, delight your guests with this lightly boozy dessert. Served in lemon halves and garnished with basil, this refreshing desert is full of zesty flavour enhanced by ANGOSTURA® aromatic bitters. We’re calling it the Bitter Lemon Posset, and it’s sure to impress.

...Bitter Lemon Posset
- 1 pint heavy cream
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons lemon zest from 2 lemons
- 1/4 cup freshly squeezed lemon juice from 2 lemons
- 2 tablespoons lemon liquor
- 8 dashes ANGOSTURA® aromatic bitters
- Basil leaves for garnish

Method
Pour the cream into a saucepan with the sugar and gently heat, stirring, until the sugar has melted. Bring to a simmer and bubble for 1 min. Turn off the heat and stir in the lemon zest and juice.

Once cooled at the lemon liquor and the ANGOSTURA® aromatic bitters and divide between your serving pots, we opted for hollowed out lemons, then garnish with basil leaves and chill in the fridge for 4 hours.
